Chef steward is a junior management role in large catering or banquet hospitality operations found in hotels. In O’Fallon and Rutherford’s 1994 book, “Hotel Management and Operations,” a generic hotel hierarchy lists the chef steward as having non-managerial staff reporting to them, with themselves reporting to the catering director or the executive chef, who in turn reports up to the food and beverages director and through them to the general manager. Although the specific duties of a chef steward vary depending on the hotel, some common characteristics exist.
