If the project you are doing has multiple dates and it is carried out over a particular time period (example: volunteers needed to drive to a field trip on 05/14/2010), then use Coordinate Volunteer template. If what you are doing has multiple dates and it is much more of an over time project being managed (example: planning for annual auction, need venue figured out by 04/22/2010), then use EVENT PLANNER template as it has multiple dates.
