What are the differences between restoration of vitamins and fortification?

0

Fortification is the addition of one or more vitamins to foods that do not usually contain these vitamins or already contain these vitamins in lower quantities. In general, this is being done to improve the nutritional value of the foods in order to ultimately improve the intake of vitamins on population level or to reduce possible deficiencies in the population. Restoration is the addition of vitamins that were destroyed during production of the foods, during storage or transport, despite following good manufacturing practices. This is done to restore the levels of vitamins that were present in the foods before they entered the production process.
