What are the differences between chorizo and Italian sausage?
This question is impossible to answer except with the grossest of generalizations or by making assumptions. Most types of chorizo are made of pork; Italian sausages are made of pork or other meats. Most chorizos are quite coarsely ground, if not chopped; Italian sausage is much more often ground pretty fine. The spices are different. Italian sausages often are allowed to ferment, chorizo is not. Italian sausages can usually be sliced thin, for sandwiches, etc. Chorizo is usually more suitable for consumption whole or in chunks, after cooking.
