To control the temperature by adjusting the Damper Top and Draft Door to allow more air or less air to increase or decrease the heat inside the cooking chamber. When the electric temperature controller is not used the opening of the drafts will reduce the temperature inside. When charcoal or smoking wood chips are added the drafts are opened as desired for temperature increase.
