What are the best, simple, South Beach diet recipes you have found, or maybe even thought of yourself?
I did South Beach a couple of years ago (45 pounds, 4.5 months). I couldn’t stand the meal schedule though so I went back to the schedule I did before: two meals and one snack a day. And I stayed on Phase I for the whole time (I don’t recommend that because some people develop problems doing it, but I was in a hurry). Although, I bought the books and hit the recipe sites (linked below) what I mostly did was to take the Phase I eat-all-you-want-of-these list and started making up my own recipes. About once a week I made a big pot of very spicy marinara sauce and then cooked lean pieces of meat in it (chicken breasts, pork, seafood like scallops or shrimp, my own meatballs made with low fat hamburg, lots of veggies and no bread crumbs, etc.). I used sauteed (in a little PAM) mushrooms as a pasta substitute and topped it with some kind of fat free cheese. I made chili with low fat hamburger, lots of hot peppers and other veggies and red beans for bulk. To go with that I used fat free refr
