The best piece of beef for roasting for flavour, tenderness and generally the best for cooking is prime fore ribs of beef. You can also use topside but it would prove to be a bit more chewy than fore ribs and drier as well. Silver side is also an option but it needs to be cooked slowly and it cooks up quite dry. all these meats can be found in preferably a butchers as they are the professionals, but you also can buy from a supermarket but you have to take what they have cryovacked. Just a tip as far as cooking ribs are concerned, try spreading a bit of french or grain mustard on the beef before cooking then sprinkle with salt and pepper.
