In my humble opinion, selective breeding of both livestock and food crops is more for the benefit of the producer and the retailer than the consumer. Reduced production costs, increased throughput, reduced spoilage in transit, uniform appearance, etc, etc.. Whereas the consumer would be more interested in taste, texture and nutritional quality. Today’s industrial farming methods aren’t overly concerned with these issues.
