What are sulfites and should I worry about them in wine?
All wines contain sulfites. Sulfites occur naturally during wine fermentation and prevent oxidation and bacterial growth. Roughly one in 100 people may be allergic to sulfites. Sulfites are not the cause of “red wine headache,” as is evidenced by the presence of sulfites in dried fruit as well. Unless dried fruit gives you a headache, too.
