What are starches?
Starches are made by plants in the process known as photosynthesis. Carbon dioxide and water are taken in and transformed into sugars, which are then chemically bonded together. This process is driven by energy derived from sunlight. The starches (and sugars) are commonly stored in seeds, fruits, roots and tubers. Examples of starchy foods include bread, potatoes, cereals, rice, pasta, chapattis (griddle baked flatbreads), yams and plantains.
