Roasted pork loin is nice and not the usual Christmas dinner. Coat the loin with spicy mustard and thyme. Place in a baking dish lined with aluminum foil, cover with aluminum foil and bake at 400 degrees for 1 hour 30 minutes. Slice and spread it out in the baking pan….sprinkle with olive oil and more thyme, bake an additional 5 to 10 minutes. If you like: Mix 1/2 cup honey mustard with 1/8 cup regular mustard and 1/4 cup mayonnaise to serve with the pork. (honey mustard is too sweet for me so I use this recipe and it’s just right, you can experiment with the ingredients to get the taste that’s good for you) Serve with mashed potatoes, green beans and rolls. My family loves this dinner.
