The pdf file, http://www.nakedlight.co.uk/pdf/articles/a-002.pdf, provides a reasonable amount of detail about the Greek modes including some description of their characteristics and development and some attempt at expressing them in modern musical notation. Giving the planet with which each mode was associated (and hence the Greek God) is probably as close as this document gets to explaining the supposed connection of modes with human moods, something which your wikipedia link ascribes to Plato so I suppose it’s probably in his works that you’re likely to find a good explanation of that aspect of things.
