What are some fun tasty healthy vegetarian food choices?
I’m a vegetarian, too. I eat a lot of veggies (obviously, hah!) like carrots and peppers, and also beans which are high in protein. Do you like chick peas? Those are also high in protein. Many soups are tasty and vegetarian, like Progresso Lentil soup, minestrone, black bean, tomato, etc. Tomato mozzarella sandwiches with pesto and balsamic vinaigrette are great on toasted Italian or French bread (maybe even ciabatta!). I would also try making homemade pizza.My favorite is pineapple! Do you like pita and hummus? A great snack. And fruit, of course. My mother makes the best vegetarian chili. She uses Morningstar Farms ground vegetarian beef. Also, Morningstar Farms make great buffalo wings! Check their website– good stuff. My favorite veggie burgers of theirs are the Spicy Black Bean burgers. Try fun salads with fruit and cheese, and make homemade trailmix for a snack (I like peanuts, raisins, m&ms, and dried pineapple)! Chewy bars are good. And stir fry. I hope this helps!
I like to try new kinds of food all the time. I’ll buy a vegetarian sushi cookbook and make sushi, edamame and veggie tempura. Or I’ll buy a Indian vegetarian cookbook and give curries a try. My girlfriend’s been looking up middle eastern food, so I’m guessing that’s the next thing we’ll be trying.
Look toward African cuisines for inspiration. The diets in African countries consist largely of fruits, vegetables, and grains, since that’s what most people there can afford. Given the limited choices, there are many recipes from these foods that add variety to the local diets. You may find recipes that interest you, and you can easily modify them if the ingredients are hard to find in American supermarkets.
