What are some fun quick and easy recipes for potatoes?
Yummy Potatoes, aka Funeral Potatoes This is my mom’s version of funeral potatoes. I love these! 32 oz frozen shredded potatoes 1/2 cup melted butter 1 can cream of chicken soup 12 oz. sharp cheddar cheese 8 oz. sour cream 1/2 small onion diced (sometimes I use a little bit of minced onion instead) Mix together everything except for the shredded potatoes. Stir shredded potatoes into the mixture and then pour into a buttered 9X13 casserole dish. Bake at 350 uncovered for 45 minutes. Stir potato mixture together again and transfer into a serving bowl. Optional: Melt 1/4 cup butter and mix with 2 cups crushed corn flakes. Sprinkle on top of potato mixture before baking. Bake 350 uncovered for 45 minutes.
