Indian recipes are often intimidating because they have long lists of ingredients and involved preparations. Some of them have unusual ingredients, like asafeotida and amchur powder or green mangoes. Well, here’s a secret: if you don’t have an ingredient, you can just leave it out. Seriously. It’ll taste different, but that’s not necessarily bad. Indian recipes are incredibly flexible, and no two Indian cooks do it the same way.
