It depends on the type of restaurant. There is upscale French food and “peasant” type French food. The French are know for constantly experimenting and evolving at the top of the culinary world. They are masters of both very complex and very simple, understated dishes. They are great with using fresh herbs and are even better about knowing their cheeses.
