Spices are added to the meat, again depending on the type of sausage. The casing itself is one of two types: Natural or artificial. Natural casing is hog or sheep’s small intestine. Artificial is an edible tube, made with collagen. Many gourmet sausagemakers scoff at artificial, insisting on natural only due to the extra flavor imparted by natural casing.

good sausages should be 65% lean pork 15% fat the rest is rusk and seasoning aprox, dont get sausages mixed up with bangers these contain all the c*ap minced up and emulsified steer clear of these they are cheap and nasty, go to a good butcher and ask if they make there own they will be good quality, they may be a little more expensive but you cant beat a good home made sausage, some do specials with added garlic, stilton cheese, tomato, leeks, If you live in the uk you can always find a good butcher in most towns and vilages who do differant ones, good luck in your quest Where i live in the midlands there are some good shops around our area award winning sausage makers
