You can use anything you want,but here in Valencia churros are a traditional treat served during St.Joseph (Las Fallas).The traditional way to eat them is to dip them in hot chocolate (not a chocolate dip).The chocolate is thickened with corn starch,and must be dark,not milk chocolate,and is just the right consistency to be drinkable and also to dip the churro into (without making a mess).The secret is to use dark( un sweetened baking chocolate).You will find this to be a lot better than using a chocolate dip that you buy in stores.
