What are beef tendons, and where can i buy them in the UK supermarkets?
I am a former chef from Canada and I get them here in Toronto Canada, they are a chinese dish, they use the fore and hind foot tendons from beef cattle, braise them soft, when cooked they almost look transparent, they have jelly like taste and the Chinese and Korean people use them in stewed dishes, with short ribs in a noodle soup and as an appetizer slice with other foods like pork tongue, jelly fish and boiled chicken and all served with a ginger and green onion sauce and a bit of black chinese vinegar. If you want to find them and cook them yourself, check with a butcher shop that does whole sides, but they will come frozen in Asian shops to, even there meat counter may have them. I have seen them in the UK on my visits, just call around for less hassle. I get them here at an asian supermarket in town, I like to add them with a few slices of chinese sausage and BBQ pork to a ramen soup bowl along with a few pieces of lettuce. They have sweet anise flavour, like eating cold squid.
