There are no preset testing frequencies for meat products in regulation EC/2073/2005. Testing frequency should be decided by the food business operator within procedures based on HACCP taking into account the nature and size of the business. There are preset frequencies for minced meat and meat preparations. However, these do not apply to establishments producing small quantities. In the UK, our guidance is currently that a small quantity is up to 2 tonnes per week.
