Levin Sports writer Last fall, George Ibanez came up with a concept novel to North Florida: Get area water enthusiasts involved in water polo. He figured if he offered classes that taught fundamental water polo skills, he would corner the market on a little-known sport in a big city. Almost a year later, the North Florida Water Polo Club is gaining in popularity and in numbers. Ibanez, who is a former high school water polo coach from South Florida, said the interest in the sport is greater in the central and southern part of the state because there are high school water polo teams and age-group teams. He hopes to promote the sport here through word of mouth and team success. ”My goal is not to promote this as a club, but rather as a sport,” said Ibanez, who has been involved in water polo for the past 25 years. ”It is a sport that is fun,
