The various saturation settings on the E-1 are darn cool but I’m concerned about what to pick based on what I’m shooting. Any advice?

You might want to consider placing the saturation settings closer to the “middle of the road” if the scene doesn’t have colors you know should either be really saturated (a photo of colored roses), or not really saturated (a pastel scene). That would mean a CS setting of 2, which is considered “normal.” You can always boost the saturation in an image editor like Adobe Photoshop and even do this locally (on selections instead of the entire image). Also consider shooting RAW+JPEG since these settings do not affect the RAW data in any way. Then, when processing the RAW data, or even afterwards in an image editor like Photoshop, you can play around with saturation. The same idea applies to the CM (color boosting) options.
