The surface mount LM79Lxx (and 78Lxx) has multiple V- (gnd) pins. Do I have to connect all of them, or can I just connect to one of them?

It is not necessary to connect to all V- pins, but it is necessary to have these pins connected to PC board copper traces for thermal dissipation. Heat is conducted out of the device through the leads.
