The fruit I bought looked and smelled great, but it was brown inside when I cut it open. What happened?
Before ripening, stone fruit is temperature-sensitive. Fruit that’s brown inside may have been stored at an incorrect temperature. If unripened fruit is stored refrigerated during shipping or sale, it can develop brown discoloration inside, known as internal breakdown. It’s best to store unripened fruit in temperatures ranging from 51°-77°F (10.6°-25° C). When fruit is ripe to your preference, it can then be stored in the refrigerator.
