The firmer the footbag the farther it goes and the more spin you can put on it. Though harder to kick at first than a softer footbag, the firmer footbag tends to lend itself to footbag dance and circle kicking. On the other hand the softer footbag, especially those filled with sand are very good for juggling or stalling tricks because they stick to the foot (or body part). Every kicker develops his own style and eventually knows what footbag he/she likes the most. You simply have to try the various ones to find that special one that works for you.
