Single temperature or multiple temperature rest mashing?
We generally recommend single temperature (infusion) mashing for the beginner, as all William’s grain malts are modified enough to convert fully at a single temperature rest of 150° – 158° F. held for one hour. Multiple temperature rests can help eliminate protein haze, although they generally do not result in more extract.
