The specifications are different. In general, Premium grades allow for the least amount of residual salt and are approved for use in pharmaceutical products. In general, Food Grade products allow for more residual salt and are approved for use in food products. In general, industrial grades allow for the most residual salt and they are not approved for use in food or pharmaceutical applications.
