For Word files, you can quickly display the text as plain ASCII text with the antiword utility, see `man antiword’. It can also produce PostScript. To edit and otherwise manipulate MS Office files in more detail, including also Excel and PowerPoint files, you can use OpenOffice, which is installed on the Linux hosts.
