The sensor will lose heat if it is not insulated from surrounding airflow. If you have the water temperature sensor screwed into the thermostat housing it can lose up to about 10 degrees if cooling air is flowing past it. Use a small piece of insulating foam cabled tied over it to insulate the sensor. Also make sure the black wire is connected to a good ground.
