Two possibilities come to mind though there are likely many more. One is a partially plugged radiator that flows adequately for low load use but cannot deal with higher heat loads. You may have to have the radiator flow tested to determine if this is the cause. My other thought would be combustion gasses leaking into the coolant. There are test that can be run to determine this. For a more detailed description do a search in the General Automotive section for head gasket.
