IS VEGGIE CHILI ALLOWED?
Vegetable Chili is usually made from tomatoes, fresh vegetables, and beans. All of these foods fit into the Carbos and Veggies group. Here’s the catch: if you are eating Carbos then you may not include any fats on Level One. Most Veggie Chili is made by sautéing the veggies in oil. This will create a minor imbalance with a Carbo meal. (It is fine for Level Two.) Therefore, if you want to sauté your vegetables in oil, make your Veggie Chili a Pro/Fats meal and add cheese and sour cream. For this Pro/Fats option you would not add any beans (or brown rice) to your chili. If you want the beans and brown rice, eliminate any fats (like oil, cheese or sour cream) and make it a Carbo and Veggie meal.
