I use more garlic in my tzatziki than this. A lot more. For a cup of yogurt I’d use at least three cloves. Also, I don’t use vinegar in mine. Don’t forget to use greek yogurt, or at least filter the liquid out of the regular yogurt using cheesecloth and a colander. Also, split the cucumbers in half and remove the seeds with a spoon, then dice the cucumbers and salt to draw out liquid, put them in a tea towel in a bowl, then cover with the towel and stack something heavy like canned food on them to get the rest of the water out. Then puree in a food processor with the herbs and oil. I normally use mint in my tzatziki also instead of oregano and thyme. Add a little lemon juice after you combine all the pureed cucumber and drained yogurt. Tadaa! Awesome tzatziki!
