Like this … CHILLI CON CARNE (WITHOUT BEANS) Serves 2 INGREDIENTS 2 onions 1 tablespoon of sunflower oil 500g of minced meat 2 teaspoons of chilli powder 400g tin of plum tomatoes* 1 beef stock cube METHOD Peel the onions and chop them into tiny pieces. Put the oil into a frying pan on a medium heat. Add the onion. Fry the onion for about 2 minutes. Stir frequently to stop it sticking. Put the meat into the pan and fry for 2 to 3 minutes, stirring all the time. By this time, it should have broken up and be an even colour, with no pink bits. Add the chilli and stir thoroughly. Open the tin of tomatoes. Pour the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan). Pour the chopped tomatoes into the pan. Crumble the stock cube into the pan. Stir thoroughly. Continue to cook, stirring as the mixture boils, until the sauce has reduced. ADDITIONS & ALTERNATIVES Use minced beef, lamb, pork or turkey, whichever is cheapest. Add

As many have said, do not add beans to the chili. And as a few have said, most Texans do not add beans directly to the chili but serve a bowl of beans as s ide dish! If you want a change of pace from a beef chili, try making one with either ground or cubed turkey breast for a white chili. Although chicken is the most popular poultry used in white chili, turkey might stay moister in the chili.

Certainly…just use more beef! Add another small whole diced onion, another tablespoon of chili powder, a dash of garlic and my secret ingredient – a tablespoonful of instant coffee! Stir it all together and let it simmer for at least two hours, stirring occasionally and adding water if it begins to get too dry. And the longer it cooks, the better it’s gonna taste. Two hours is the minimum. Four hours max…

Sure, as others have said just don’t add the beans. I always run the beans through the blender and add the smooth puree’ that results to my chili. People who “hate beans” love my chili because there are no beans in it! I never tell them my secret.
