Is there any way to exclude certain transcripts while applying for graduate school?

No, I doubt there is a way to exclude prior transcripts. If you have been to more than one college and you have had credits transferred from your old school to your new school, the previous college and credit amounts will probably be somewhere on your new colleges transcript, meaning that they are going to know if you didn’t send them the transcript from your previous college. If you took a long break from college, those transcripts might not apply any more. If you don’t include all the information required, they have the option not to even look at your application. It might not even make it to the admittance committee table.
