First things first – complex/simple carbohydrates will not make you fat. What you are referring to is refined carbohydrates: white flour, sugar and sugar products, refined rice, baked goods and the like. These refined products have been stripped of their nutrients and provide little food for your body. If you have a diet heavy in these things they can cause headaches, yeast imbalances (candida albacans), bloating, IBS, constipation, and eventually diabetes.
