Is there an easier way to move a persons greetings from category to category, than do manually copy-paste?

No. But in my experience, copy-pasting all the greetings to a text-file before pasting it in the new category is a great opportunity to look at your greetings, fix potential errors, and maybe even add new ones. And, once again, make sure that you paste your greetings into category 5.
