You probably already know that Mung Beans are also known as Chinese Bean sprouts. Any small round beans from a health food shop would do. They can easily be sprouted in a shallow plastic box (in the dark) – just keep about 0.5cm of water in the bottom but rinse through and refresh this each day. Beans are ready to use in 5 or 6 days. Ready germinated bean sprouts are commonly available in supermarkets as an alternative.
