My mother used to make a nice vegetable lasagna with no sauce, its main ingredients were spinach (a superfood), julienne carrots, lowfat cottage cheese (instead of ricotta) and low-fat mozzarella cheese. Mix spinach, carrots, cottage cheese and half of mozzarella to make the filling mixture, it should be moist and spreadable. Layer between cooked lasagna noodles, and top with remaining mozzarella. Of course, the ingredient amounts will vary based on size of recipe, and I would add garlic and salt and pepper to the spinach mixture, and maybe a little olive oil. Bake in a 350 deg. oven for about an hour, covering with foil for the first 45 minutes.
