Is there a substitute for butter/margarine for baking?

Sometimes apple sauce can be substituted for the butter. Depending on the recipe and type of cookie it may or may not work. If the recipe calls for melted butter you can substitute vegetable oil. This will alter the taste a bit but should not alter the consistency. The link below has a chart of substitutions. Butter is listed under fats on the chart. It shows shortening and lard as substitutes. Since lard is pork fat I would choose it over shortening. Shortening is a synthetic product. It is hydrogenated oil which is very unhealthy and is even being banned from use in human foods in some places. Hope this helps you! Hope your cookies come out tastey!
