Just use oil and some herbs (celery salt, basil, oregano…). Even mayonnaise has lemon in it, and ketchup is pretty tangy for someone who’s sensitive to these things (it contains vinegar and spices). I used to hate vinegar (and am still not too crazy about it), so I would dress my salads just with olive oil and a little salt. A dressing I use sometimes is cream cheese blended with chopped chives, soy sauce to taste, and enough water to make it pourable. Can he/she eat tomatoes? I also sometimes use cottage cheese, mixing it first with very ripe diced tomatoes and chopped cucumber, so they create a natural juice — adding a little water if necessary, any herbs and salt, and some olive oil. Then I add this mixture to the rest of the salad.
