Is there a difference, in terms of calories or nutrition, between bread and toast?
Yes there are differences although small. First, toasting will begin to breakdown and burn the carbohydrate content of the bread. If the toast is well done then some of that carbohydrate has been converted to carbon and there will have been a release of energy as part of the burning process. That means a piece of toast has less calories to release to the body when consumed. Secondly, some of the vitamin content of the bread can be destroyed by toasting and this would reduce the nutritional value. On some practical issues: It could be argued that if you eat the toast when it is very hot then the heat energy will be absorbed into the body. However, I suspect that this would be less than the energy lost by the toasting process and such heat energy is not captured as chemical energy by the body.
