Is there a difference in taste or texture when baking with organically derived ingredients?
A. Organic ingredients don’t leave any aftertaste. Organic chocolate doesn’t have that coconut-y flavor a lot of cheap chocolate has. Cane sugar is less processed, less refined than conventional white sugar, which is actually from sugar beets and not sugar cane. When I use it in my frosting, it’s not a sugar shock. Everyone’s eating organic. Even Wal-Mart and Target are carrying organic products. It’s not just elitist and accessible to the rich. There’s always going to be parties and anniversaries. You can’t avoid eating sweets. The book is a good introduction for people who have never used organic ingredients. Q. What is the most unusual custom-cake order you’ve received? A. I have done a lot of organic Yoda birthday cakes for boys. Everyone deserves a good organic cake, not just something sophisticated or fancy.
