Is there a difference between Italian cuisine and Italian-American cuisine?
A.G. Ferrari Foods specializes in authentic Italian regional cuisine rather than Italian-American cuisine. Although the roots are the same, Italian-American cooking has evolved into an entirely distinct cuisine using American ingredients and incorporating American tastes. Dishes like penne with vodka sauce, chicken alla Francese, chicken parmigiana, cheesecake and Italian rum cake are Italian-American inventions. Even fettuccine Alfredo, which was invented in Rome, is more likely to be found in an American restaurant than an Italian one. An excellent cookbook full of Italian-American favorites is The Italian American Cookbook by John Mariani and Galina Mariani.
