Is their any science behind why Nova Scotia salt is the best?
Nova Scotia salt has a distinctive geological evolution. A huge basin now called the Avalon Terrane filled with sea water about 340 million years ago. Excess evaporation and the irregular restricted influx of seawater caused various elements that were dissolved in the water to be deposited (including salt). Repeated flooding and drying over the next 15 million years had the effect of eliminating some of the undesirable deposits that are produced with other mined salts. This process created a salt deposit many thousands of feet thick that has yielded some of the most pristine salt available in North America.
