Q I know that Emulsifier 471 is a Mono- and Di-Glyceride of Fatty Acid, can you please tell me whether the Fatty Acid is animal-derived or vegetable-based. If animal-derived are you able to tell me which animal it came from?!! Thanks a lot. A The fatty acids used in Emulsifier 471 (and some of the other emulsifiers too for that matter) can be derived from animal or vegetable sources. And what source a particular manufacturer chooses for an ingredient in their products is up to them. (If the fatty acids are derived from animal sources, they are not derived from one particular type of animal, they are derived from animal fats, a general by-product of the meat industry. The main types of animals, however, are pigs and cows.)
