Is spinach meatloaf good?
Yes it is, but you need to season it well. Add chopped parsley, scallion a bit of ricotta and some parm cheese. Make your meatloaf mix, and flatten it out. Put the spinach mixture in the center and roll it as if you were making a jelly roll. Bake it your way and you can add any sauce you want. @ Asker: I found this recipe for you which you might like.
