The cuisine has a decent amount of saturated fats in butter, whole milk, hard cheeses and game birds. But fish, vegetables, whole grains and fruits also play a large part in the diet. The grains include rye (shown to have metabolic health benefits) and whole oats, unlike the bleached & enriched wheat most common in American diets. The biggest factor is (1) simple portion control and (2) balanced diet. Their idea of a sandwich is a slice of bread w/ spread and sliced meats and cheese. The American idea of a sandwich is the size of an arm (just fine w/ me as long as it’s exercised off). The diet typically has a good distribution of fats, carbs & protein. All these no-fat or all-protein crazes we have only throws the body off.
