Is NEWTREE Chocolate organic?
The majority of cacao trees grow in the shade of the rainforest. In the rainforest, a variety of plants, mammals, and insects provide a complex and natural system of pest management. Thereby eliminating the need for the chemicals used in conventional farming. Most cacao is grown on small, remote family farms. Organic farming is most common as chemicals for conventional farming are too costly, virtually unavailable in the rainforest and cumbersome to apply to cacao trees. Thus, roughly 85% of cacao is organic by default. Organic certification verifies the farming practices but does not ensure the quality of the beans or the fermentation process, two factors which significantly influence flavor. To date, NEWTREE has yet to find sufficient quantities of organic chocolate that meet our organoleptic standards of 73% cocoa with corresponding amount of fat and sugar. But we are still looking.
