Is modified food starch unhealthy?
There are many types of modified starch, there is nothing unhealthy with the starch we use. Your body will treat it the same way as it would starch in a potato and it falls under total carbohydrates. Any thing that’s cooked is modified. Many foods are much healthier uncooked, but it doesn’t mean they’re unhealthy after cooking, like carrots or molasses for example. Modifying a starch carbon chain is much like trimming trees, you modify it by cutting off a couple branches, but it’s still the same tree. Not to be confused with genetically modifying or engineering seeds. Your body produces Hydrochloric Acid to digest food. People take extra Hydrochloric Acid to help digestion. Hydrochloric Acid is used to modify a percentage of the tapioca starch we use just like your body produces hydrochloric acid to digest food. This makes it more functional in cold water and helps other ingredients mix and emulsify better for a naturally stable better tasting product.
