Is modern irish food still centered around the potato?
You can have a look at some recipes by ‘modern’ irish chefs that centre their food around traditional irish ingredients, with a modern technique. The BBC has a long running program called ‘Great British Menu’ that showcases the best (some are michelin starred chefs) regional chefs in the UK. Unfortunately, the recipes listed only apply to Northern Irish chefs, and as they are modern chefs, this won’t be indicative of what the average Irish household cooks.
